Leftover Fried Mashed Potato Balls

Mashed potatoes have always been an easy vegan and gluten free side dish. Sometimes just having vegan mashed potatoes even makes a great snack! And gluten free mashed potatoes are so easy to make.
Whether made from scratch or in a box, leftover mashed potatoes can pose a moral issue: is food waste ever okay? The answer for me is no. I like to repurpose food as much as possible. So, I’m always recreating my meals into leftover recipes.
Also, I always make way too many mashed potatoes, and when all of the other leftover stuff that pairs with the meal is used up, the mashed potatoes just sit in their container in the fridge wondering if I’ll eat them.
One day I decided that instead of letting my delicious vegan potatoes go bad, I would turn them into something fun.
I concocted this recipe with two cups of leftover potatoes, and a bunch of brainstorming. I’ve tried it a few more times since then and what I am sharing with you all is the perfected recipe.
This is very similar to the vegan dumplings I’ve made but with way more potatoes and less flour. It’s easy, and great for an on-the-go gluten free snack.
Ingredients:
2 cups of leftover mashed potatoes
3/4 cup of gluten free all-purpose flour
1/2 cup of cornstarch for mix
1/4 cup of cornstarch for dipping
1 tablespoon of nutritional yeast
1 teaspoon of garlic powder
1 teaspoon of chives
1 teaspoon parsley
Instructions:
If your leftover mashed potatoes are like mine, then they’re probably a little watery. If they aren’t, then you can add a few tablespoons of water. You want the batter to be between dry and wet. If it’s too dry then add water. If it’s too wet then add more flour. If you can’t have cornstarch then you can use potato starch or arrowroot starch.
Add all of the ingredients, mix well.
Pinch a bit of the batter and roll into a 1/2" to 1” ball.
Dip ball into extra cornstarch
They can be fried in a standard fryer on 350° for 4-5 minutes, shake basket around 3 minutes to make sure they don’t burn.
They can be fried in a frying pan with oil on medium heat, but the results may not be as round.
They can be placed in an air fryer. Just follow fryer directions.
Fried mashed potato balls can be dipped in applesauce, ranch dressing, or enjoyed plain.
